Zucchini-Buckwheat Towers with Egg and Tomatoes

Tasty **zucchini-buckwheat towers filled with egg and decorated with stewed tomatoes. **Light meal that will not burden your stomach, but it surely fills you up. It has a high protein content, but at the same time only a little of fat and calories. Perfect food for diet or for athletes which will please with its nutritional values, but especially with a great taste. You will love this nutritious meal full of vitamins and minerals as breakfast, lunch as well as a warm dinner.

Buckwheat is naturally gluten-free, therefore also suitable for celiacs, contains complex proteins and carbohydrates, fiber and richly contains minerals and vitamins. It is also famous for its rich rutin content that helps to increase vascular elasticity in venous diseases. At the same time, juicy zucchini promotes the body's defense system and supplies body with many valuable substances.

If you'd like to try a slightly less diet version, you can also stir some grated cheese into the dough.

Ingredients

  • 1/2 cup buckwheat (I recommend this one)
  • 1 zucchini
  • 2 eggs
  • pinch of sea salt
  • For garnish:
  • 2 tomatoes (or 100g (3.5oz) cherry tomatoes
  • 2 eggs

Instructions

  1. Boil the buckwheat in 1 cup of water.
  2. Let it cool down and then, in a bowl, stir with finely grated zucchini, eggs and a pinch of sea salt.
  3. Shape small flatbreads from the dough, place them on a sheet lined with parchment paper.
  4. Bake them for 35-40 minutes at 190 degrees Celsius (374 degrees Fahrenheit) until golden and until almost all liquid evaporates from them.
  5. On a non-stick pan, separately break and cook 2 eggs.
  6. Place fried egg between two baked flatbreads.
  7. Chop tomatoes finely and stew for a while on the pan.
  8. At the end, decorate the towers with them.
  9. The towers can be served with seasoned Greek yogurt, mustard or sugar-free ketchup.
