Baked rice and tuna patties

If you are tired of the classic combination of rice and tuna, try this dish in a new version - baked rice and tuna patties with cheese is a wonderful change. You can serve them either alone or with your favorite sauce - I recommend, for example, this homemade sauce: or tzatziki.

I used tuna in sunflower oil from Sun&Sea for these baked rice-tuna patties. However, if you would like to make this recipe a bit lighter, you can also use tuna Sun&Sea in brine. The recipe will work both ways. You can use grated mozzarella or another, less fatty type of cheese, according to your preferences.

You can serve these healthy tuna tater tots with rice, for example, for dinner or as a nutritious snack during the day. It's a perfect recipe especially, if you need to use up cooked rice that sits in your fridge.

Ingredients

  • 150g of rice (e.g. jasmine)
  • 2x80g of tuna in sunflower oil
  • 100g of grated cheese (e.g. mozzarella)
  • 1 egg
  • 1/2 tsp of salt
  • 1/2 tsp of marjoram
  • 1/4 tsp of paprika

Instructions

  1. Pour twice the volume of water over the rice and cook it until soft. After cooking, let it cool for a while.
  2. Then, move the rice to a bowl, and combine it with tuna drained of oil, spices, salt, egg, and grated cheese.
  3. Mix the batter well by hand and then form it into smaller patties by hand.
  4. Place them on a baking sheet lined with baking paper. Make sure that the patties are higher; they flatten a bit during baking.
  5. Bake the patties for about 25 minutes at 185 degrees Celsius until golden.
