Zucchini "Spaghetti" (Zoodles) with Salmon and Creamy Avocado Sauce

Zucchini, zucchini everywhere, you say during the walk around your garden. If you are out of ideas of what to do with so much zucchini, I'd like to introduce zucchini "spaghetti" with salmon and creamy avocado sauce. I can see your eyes are shining, and trust me, this combination will also please your heart.

The most delicious and the best fitness recipes are to be found in combination with avocados, that's for sure. It is a very healthy fruit and is one of the most nutritious superfoods in our planet. Avocado in combination with salmon makes it a nutritionally balanced recipe, as this couple contains even more protein, unsaturated fat, omega-3 and omega-6 fatty acids, and with its low carbohydrates level it helps all fighters on various diets.

Zucchini, charged with nutrients, is very proud to take part in this concert of flavors, because it is juicy and easy to prepare. At the same time, it’s beneficial for the body's immune system, detoxifies it effectively and, in combination with other ingredients, secures easy digestion of this vitamin bomb. You can create zoodles from zucchini simply by using a spiralizer (I recommend this one) .

Zucchini spaghetti (also called zoodles) with creamy avocado sauce and salmon are excellent, healthy fitness dinner or lunch. It will fill you up and provide you with lots of vitamins, minerals, proteins and healthy fats.

Ingredients

  • 300g (10.5oz) salmon
  • 1 zucchini
  • 1 avocado
  • 200g (7oz) mushrooms
  • 3 Tbsp plain yogurt
  • juice from 1 lime
  • ⅓ onion
  • 1 clove garlic
  • parsley
  • ½ tsp. sea salt (I recommend this one)
  • ½ tsp. black pepper

Instructions

  1. In a non-stick grilling pan, grill salmon with mushrooms until golden.
  2. Grate or slice zucchini into “spaghetti” with a peeler or grater and place into a bowl.
  3. In a blender, blend together avocado, yogurt, lime juice, garlic, onion, black pepper, salt, and a little parsley.
  4. When done, mix the sauce with grated zucchini, broiled salmon, and mushrooms, and serve warm.
