Light Chow mein with braised cabbage and baked tofu

If you like Asian food, you must try this healthy and light version of Chow mein with braised cabbage and baked tofu! You will find perfectly combined flavors of noodles, stewed vegetables, and crispy toasted tofu.

If you want to make the food special, you can also add in stewed oyster mushrooms. If you don't have Asian Chow mein noodles, you can use other noodles, such as rice noodles.

Chow mein can be translated as fried pasta, popular especially in China. Surely you have already seen how they prepare lots of noodles with vegetables in large woks, which have special handles so that they can be easily handled so the food can be mixed properly. This is exactly what this chow mein with braised cabbage looks like. First, we pre-cook the pasta in water and then mix it into the stewed vegetables, where all the flavors from the added ingredients are absorbed by mixing and frying. We will add much less oil to this chow mein than is usual in Asian restaurants, thanks to which you will not have a heavy stomach after this meal.

Try it with crispy tofu cubes - it's really delicious. For a more pronounced taste, I recommend choosing smoked tofu. Chow mein with cabbage and tofu is great for lunch as well as for dinner.

  1. In a deep pan, fry the finely chopped onion in hot oil until golden.
  2. Add cabbage chopped into small pieces and simmer the mixture until soft.
  3. Meanwhile, cook the pasta in salted water until soft.
  4. Dry the tofu with a kitchen towel and squeeze as much water as possible out of it. Then cut it into pieces.
  5. Wrap the tofu pieces in a thin layer of starch. This whole process will ensure that the tofu will be more crunchy.
  6. Roast the tofu pieces in an oiled pan until golden brown on every side.
  7. Mix cooked and strained noodles into the softened cabbage and season the mixture with soy sauce and sea salt to taste.
  8. Serve the food warm, topped with roasted tofu cubes.
