Coconut-Banana Cookies with Yoghurt Topping and Cranberries

Tasty, juicy coconut-banana flourless cookies with yoghurt topping and cranberries. Cookies are simply divine, and this tender and healthy all the more! Thanks to cocoa and yoghurt topping, they look irresistible, and you'll definitely surprise every visitor or even on a festive table.

As always, preparing these cookies will not be complicated and time-consuming. Just stir all the ingredients together and place resulting dough on the sheet in desired shape - you can create classic round cookies or a valentine hearts and decorate with topping and strawberries. Yoghurt topping from three ingredients is perfect for this recipe. You don't need to add cranberries or coconut, but I warmly recommend this version. You can perk the healthy cookies with any dried fruit, pieces of dark chocolate, goji, coconut, nuts or fresh berries to your taste.

As you can see, these coconut-banana cookies can be served in many ways. However, they will always be tender, gluten-free, healthy, and especially fit. Delight your sweetheart with a beautifully served dessert, or just treat yourself with guilt free sweet dessert.

Ingredients

  • For cookies:
  • 1 ripe banana
  • 1 cup coconut
  • 3 Tbsp cocoa (I recommend this one)
  • 2 Tbsp honey (I recommend this one)
  • 1 egg
  • 1 tsp vanilla extract
  • pinch of sodium bicarbonate
  • 30g (1.1oz) dried cranberries/raisins
  • For topping:
  • 2 Tbsp cream cheese (e.g. Philadelphia)
  • 4 Tbsp Greek yoghurt
  • 1 Tbsp honey (I recommend this one)
  • 20g (0.7oz) cranberries
  • 20g (0.7oz) coconut

Instructions

  1. Mash the banana in a bowl and stir with all the other cookie ingredients.
  2. Spoon the dough in shapes of cookies on a sheet lined with parchment paper and press them from top.
  3. Bake the cookies for 15 minutes at 190 degrees Celsius (374 degrees Fahrenheit).
  4. Then take them out and let them cool down.
  5. Prepare the topping by stirring the cream cheese, Greek yoghurt and tablespoon of honey.
  6. Spread the resulting topping on each cookie and finally sprinkle with cranberries and coconut.
  7. Store the cookies in the refrigerator - they will stiffen even more.
