Ingredients
- 300 g (10.6oz) chicken breasts
- 1/2 cup whole-wheat couscous/bulgur (I recommend this one)
- 1 mango
- 1 onion
- 40g (1.4oz) walnuts (I recommend these)
- 100g (3.5oz) strawberries
- 1 Tbsp coconut oil (I recommend this one)
- 1 Tbsp honey (I recommend this one)
- 1-2 Tbsp soy sauce (I recommend this one)
- pinch of sea salt
- pinch of turmeric
- pinch of ground black pepper
- pinch of ground caraway
- juice of 1 lemon
- raisins (optional)
Instructions
- In a non-stick pot or deep pan, melt tablespoon of coconut oil and roast finely chopped onion on it until golden.
- Add rinsed and minced chicken breasts, and dry-roast until the meat shrinks from each side.
- Then pour it with a cup of water, cover it and leave it to stew for 20 minutes.
- Then season and salt the meat, add soy sauce, lemon juice and walnuts and cook uncovered for 5 more minutes.
- If necessary, pour the meat with a little water.
- In another pot, cook couscous in 1 cup of water.
- When everything is done, stir chicken breasts with couscous in a bowl, add finely chopped mango, strawberries, honey, and you can also add raisins.
